1 1/3 cup bread crumbs (I used homemade, you can also get gluten free breadcrumbs)
1 teaspoon lemon pepper
½ teaspoon salt
¼ teaspoon cumin
5 tablespoons greek yogurt
3 tablespoons cilantro
½ lemon - juice
Heat oil for frying.
Set aside two bowls. In one bowl, mix the breadcrumbs, lemon pepper, and salt. In the other bowl, beat two eggs. Slice up the avocado and into ½ inch wedges, roll onto breadcrumb mix, dip in beaten eggs, and then back to the breadcrumb mix. Fry for 2-3 minutes. Then let them dry for 5-10 minutes (I like to let it soak on a plate lined with paper towel.)
* If you would like to make a healthier version, you can bake them in the oven until golden brown.
The dipping sauce:
Blend the dipping sauce ingredients and serve in a small bowl.
